糖不甩 Glutinous rice flour balls with peanuts and coconuts in syrup



書的初稿已差不多完成了。到今天為止已把大部份的照片、文字和食譜交給了編輯。

「這個週末女兒可以回家了。」我那位自任經理人的先生點頭說。

那有這樣做父親,不讓女兒回家的?

我馬上做好計劃,就從女兒下火車到我們送她回去的幾天內,我要和她好好地「狂歡」一番!要整個週末辦聖誕購物、喝茶吃飯、看戲談天  ...... 計算下來,時間都還是不夠的,她爸爸到時可不要跟我爭才好!

當然我絕對沒有忘記我親愛的讀者們。答應了大家十二月便回來和你們談天見面,我的心情何嘗不是同樣的急切?!

今天先與大家分享這個簡單好吃的美味甜品「糖不甩」。

希望我們都能和至親至愛的人温暖親密的「糖不甩」下去直到永遠!

I made plans for this weekend immediately. From the moment our daughter steps off the train, to the moment we take her back, we’ll be doing lots of Christmassy things!

We will be going shopping, having our girlie lunch and tea, watching  DVDs and catching up. Still, there won’t be enough time for us, so her dad had better not try and get in our way!

And of course I haven’t forgotten my promise to you my dear readers, to return in December to continue sharing my cooking and recipes with you.

So here it is, let's start with this nice and easy but really lovely dessert, " Glutinous rice flour balls with peanuts and coconuts in syrup".

With these lovely, soft and warm puddings, I wish everybody can be as sweet and close to those they love dearly until eternity.





糖不甩


材料:
64 )
  • 糯米粉 300g
  • 在來粉 ( 粘米粉 ) 60g
  • 100 ml 沸水,150 ml 冷開水 ( 或自來水都可以 )
  • 多預點糯米粉作防黏手之用
  • 小碗中加進等量烘過的花生碎和芝麻、椰絲 (不須要烘 )、及適量的幼砂糖拌勻備用



糖水:

  • 片糖 ( 紅糖 ) 60 g
  •   300 ml

2 個小鍋





糖不甩做法:

  1. 糯米粉和在來粉 ( 粘米粉 )置大碗中,先把水加進粉中搓拌,然後把開水加入把粉糰搓至完全柔靱光滑,無粒和軟硬適中。如太乾可加少許的水,太濕的話可加少許的糯米粉 / 粘米粉
  2. 把粉分做 2 份,每份搓成長條狀,每長條橫切成 8 段,每段切開 4 粒。1 份粉可切 32 粒,2 份粉可切 64 粒。
  3. 每個小粉糰搓揉成小圓球狀,放在灑了粉的大碟或工作桌面備用。
  4. 在一小鍋內把水、糖加入煲滾,可以略為攪拌以防黏底。然後轉小火繼續煲至糖完全溶化後再煮 5 分鐘左右至略稠便成糖漿。
  5. 另一小鍋內注開水煮沸 ( 水足以蓋過粉糰表面 ),把粉糰放進,要輕輕撥動以防黏底。煮沸片刻至浮起,便即撈起盛進糖水中,再煮 2 – 3 分鐘即成。
  6. 把糖漿粉糰盛進碗中,隨意灑下花生碎和芝麻、椰絲,便成為糖不甩,趁熱享用。




小心得:

  • 在糯米粉中加了在來粉 ( 粘米粉 ) 做成的糖不甩,外形更圓更美,入口軟靭而不會太黏。

    I will use your established “Glutinous rice flour balls with peanuts and coconuts in syrup” if I sell this item one day. Hope you don't mine.

      對啊,包糖不甩因為不用包餡,用這個比例的糯米粉和粘米粉來做,口感最是 Q Q 彈牙的了。
