I don’t like mince pies from supermarke...Dear Mag,<br /><br />I don’t like mince pies from supermarkets, I've only ever bought them from a village baker over the years. And now since I’ve started making my own, I’m determined to make them every year.<br /><br />Blind baking a pie crust is necessary when it will be filled with an unbaked filling ( such as with pudding or cream pies), or when the filling has a shorter baking time then the crust. I have been here for about 5 years now and I still don't like mince pies (I find them too sweet and I just can't take candied peels...) I suppose if I make my own then I could just use raisins and sultanas (and lots and lots of booze :P).<br /><br />One question: when do I need to blind bake pastry?
