豆角粒炒肉丁雜碎 Stir - Fried Dice Pork with Green Beans & Vegetables


自從開始寫部落格以來, 很幸運認識了很多博友, 從中也有些成為了志同道合的好朋友。

隨和、誠懇和大方的 Meiko (梅綺) 便是其中一位。她是個多才多藝, 聰明快樂的全職主婦。閒時寫網誌只是她多種嗜好之一 。

Ever since I started blogging, I've had the fortune of connecting with other bloggers, making some really good, genuine friends along the way.

Kind, sincere and generous Meiko is one of them. She is a multi-talented, intelligent and blissfully happy full-time house wife.  Writing blogs is only one of her many interests.




有一天梅綺問可不可以寄一本她認為我會喜歡的書給我。
這本書的名字是「老爹媽思廚」, 她說整書已讀了好幾回, 非常喜愛。

是一本集合了 40 個祖父母輩們, 在第二次世界大戰前從中國大陸去香港定居的真實故事。


One day Meiko asked if she could send me a book she thought I would like.

It was a book called "Grandma Grandpa Cook" which she'd already read several times, thoroughly enjoying 
each read.

It's a collection of some 40 authentic stories told by grandmas and grandpas who came to Hong Kong from China as settlers before the Second World War.


豐富的內容除了包含這些老人家童年的回憶, 還述及他們長大期間吃的食物。

一個美好的秋天早上, 這份珍貴的禮物從郵差手中送來。

除了這書的內容外, 我還被隨書附著梅綺美麗手書的短箋, 所說的話深深感動。

The tales are rich with their fond childhood memories as well as food that they grew up with.


One lovely autumn morning, this wonderful gift arrived through the post!

I felt deeply touched not only by the contents of the book, but also by the beautiful hand written note from Meiko that accompanied the parcel, and the nice heartfelt thoughts behind it.


當我細閱全書時, 讀到很多熟悉的故事。讓我想起父親以前告訴我們的事情, 和母親煮過的食物。 

As I was reading the book, there were so many stories and dishes that I was familiar with.  It reminded me of the things my dad used to tell us about, and the food that my mum used to cook for us.






在我掀到介紹木瓜湯和豆角粒炒肉丁的時候, 我知道我一定要親自泡製這兩道湯和菜, 才可以真正回味童年的光陰。

When I came upon the page about Papaya Soup and Stir-Fried Dice Pork with Green Beans and Vegetables, I knew I had to cook it myself in order to re-capture the taste and the recollection of my childhood days.


連我老公在吃著時也生起懷舊的心情。

多謝你梅綺, 你的鐀贈, 和送給我這本書的好意; 我會永遠珍惜。

Even my husband was feeling nostalgic about the old days as we were eating the dinner.

豆角粒炒肉丁雜碎

材料:
( 3 - 4 人份 )
  • 豬頸肉或豬肩肉 300g
  • 豆角 200g
  • 西芹 4 條
  • 甘筍 2 條
  • 甜紅椒 1 隻
  • 蔥 2 條
  • 紅辣椒 1 隻
  • 橄欖油
調味料:
  • 蒜蓉 1 茶匙
  • 鹽半茶匙
  • 生抽 1 茶匙
  • 糖 1 茶匙
  • 麻油 1 茶匙
  • 蠔油 1 湯匙
  • 魚露 1 湯匙
醃肉料:
  • 鹽 1 茶匙
  • 生抽 1 茶匙
  • 糖 1 茶匙
  • 麻油 1 茶匙
  • 胡椒粉 1 茶匙
  • 酒 1 湯匙
  • 生粉 1  湯匙
  • 橄欖油 1 湯匙

Stir - Fried Dice Pork with Green Beans & Vegetables

Ingredients:
(serves 3 - 4 )
  • 300g pork collar or pork shoulder 
  • 200g Green beans 
  • 4 stalks of Celery 
  • 4 carrots
  • 1 sweet red pepper
  • 2 spring onions
  • 1 small red chili 
  • olive oil
Seasoning:

  • 1 tsp crushed garlic
  • 1/2 tsp salt
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
Marinade for the pork:
  • 1 tsp salt
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1/2 tsp ground white pepper
  • 1 tbsp wine
  • 1 tbsp corn flour
  • 1 tbsp olive oil

做法:
  1. 豬肉切丁, 用醃料拌勻醃 10 分鐘。將豆角和所有蔬菜切粒備用。
  2. 鍋燒紅, 下少許橄欖油, 豬肉下鍋攤開, 煎香焦了一面後才反轉另一面, 在煎肉時不要翻炒,直至全部煎完, 才加進甜紅椒一起炒熟, 熄火。
  3. 可以用原鍋, 也可以用另一隻鍋。鍋燒紅下少許油, 蔬菜粒下鍋炒一回, 加蒜蓉炒香, 下調味料炒勻, 加 1 - 2 湯匙水把菜粒煮稔, 將肉粒倒進豆角雜菜粒去兜勻上碟。                       

Method:
  1. Dice pork and put in the marinade for 10 minutes. Dice all the vegetables too and set aside.
  2. Heat pan and add a little oil, spread the pork out to a single layer and pan-fry both side till golden, then add the sweet red pepper and stir - fry to cook through, remove from heat.
  3. Use the same pan or a different one.  Heat pan and add a little oil, put all the diced vegetables in, stir - fry for a little while, put in the crushed garlic, fry a few minutes then add 1 - 2 tbsp water, cooked through and add the pork, mix all together and serve.

雖然是很簡單的一碟豆角炒肉丁, 其中卻滿含著從故鄉那兒來家的滋味。

Although this is a simple stir - fried dish, it's full of flavours from my childhood memory.

      對啊! 記得每次回港, 吃泰國菜時都會吃到這類肉碎菜式,
      有些還是用來放進生菜去包著吃的 ~ 很是懷念哩!!

  4. Oh that's so sweet of Meiko to send you a book and I think I understand why she sent it to you :) the dishes seem wonderful and I remember this dish :) my grand mother use to make it! but she's getting a little old now and rarely cooks >_<

      Yes, Meiko was really kind and sweet indeed to have thought about sending this book to me; and knowing how much I would have appreciated it!!
      This was such an ordinary everyday dish which most mothers or grandmothers used to cook it quite often; you must have your own special memories about it too ~ hope your grandma is still well :)

      Thank you very much! I think the fondest childhood memories we always treasure most are food that we used to love; especially those cooked by our mum or grandma ...
