美麗的杯子蛋糕 Beautiful Cupcakes by Amy


我不是說過,要帶你們去探那位在家中替人做生日蛋糕和甜點的年輕媽媽的嗎?

電話一按,她馬上答允,約好第二天去她家坐。
認識 Amy 已有二十年了。從她十多歲開始,看著她拍拖、結婚、買屋、生孩子 ...... 到現在已是三子之母。老大十ニ歲、二兒子八歲、老么才三歲,都是可愛都不得了的小傢伙。


她才開始了這門生意不到六個月,已經門庭若市。跟她談起,她說孩子出世後,她已沒有出外工作多年。直至去年年底,有感於大兒子已上中學,最小的明年也要唸幼稚園了。日間將會有空閒時間,很想找點事做。但停職多年,一切生疏了,也很難找到可以每天兒子放學時放工的職位,或與學校假期配合的工作。

最近這兩年來,Amy 常感不適。後來專科醫生診斷出她是患了 Coeliac disease,身體對任何含有 gluten 的食物都不能接受。逼使她要吃自己預備的食物,特別是蛋糕餅食之類。

卻也因此,令她養成了在家裏弄食物的習慣,也藉此給予她成立 Cakes by Amy 的靈感。


Amy 的媽媽是職業餅師,自然她所有秘方都是得自高人媽咪的獨家傳授了。

那天在她家中吃到她做的杯子蛋糕,入口香滑鬆軟,一試傾心。馬上買了些回家,老公和女兒吃過後,都讚不絕口。

美麗杯子蛋糕  Cakes by Amy
( 基本食譜,要做份量多少可隨比例加減 )

蛋糕

材料:

雞蛋 4 隻 260 g ( 先將蛋連殼放在量度器上錄取正確重量。舉例,如果 4 隻蛋是 260 g 的話,就用 等量 260 g 的牛油、自起粉和幼砂糖。)

自起粉 self raising flour 260 g 過篩
幼砂糖 caster sugar 260 g
Stork margarine 260 g ( Amy 說她只用這隻牌子的 margarine,不用其他牌子也不用牛油的。)
雲尼拿香精 2 茶匙
杯子蛋糕紙杯和烤盤

做法:
  1. 預熱焗爐至 170 C。首先用手提打蛋器把糖和 margarine 一起打 2 分鐘至淺色。
  2. 此時逐隻雞蛋加進打勻後,下兩茶匙雲尼拿香精全部拌勻。
  3. 把自起粉加進蛋糊,用金屬大匙小力攪勻。
  4. 用雪糕匙把粉漿盛進烤盤的紙杯內,置焗爐內烘 15 分鐘,取出用竹籤插入中央部份,抽出時沒黏物便熟了。小蛋糕放網架上,涼透了才作裝飾。


奶油糖霜:

材料:
(  1 份 margarine 對 2 份 icing sugar 成 1 份奶油糖霜,有需要的話可隨比例增多 )

3 oz / 75 g Stork margarine ( Amy 說用這 margarine 做出來的奶油特別香滑 )
6 oz / 150 g 霜糖 icing sugar 
1 茶匙雲尼拿香精
粉紅色食物色素
唧袋和星型卿嘴

做法:
  1. 首先用打蛋器把 margarine 打至軟滑,下雲尼拿香精。
  2. 然後逐些加入霜糖,拌至完全混合光滑。
  3. 用星型唧嘴從小蛋糕外面至中間唧上旋紋,灑下食用閃光彩粉和隨意放上裝飭物便成。

小貼士:如想唧成雙色奶油的話,只需預備 2 份奶油糖霜,其中一份加入1 - 2 滴粉紅色食物色素。拌勻。卿袋內的中部兩旁,分別撥進 1 份普通奶油和 1 份粉紅色奶油,捲實便可以唧在小蛋糕之上。

      從一位藝術家口中說出的話,只須輕描淡寫,便能把一切繪上線條,掃上油彩 ... 這就是 meiko 你文字給人的感受和魅力。

    it's so nice of Amy to share her recipe with us! These cupcakes look amazing :) So pretty and decadnet hehe ~ YAY! I haven't had the chance to bake anything for such a long time now! I can't wait to try and bake something and I think I might start with these cupcakes WOO HOO!

      Blogger is very annoying!! They're well known for being temperamental and difficult, thank you for your patience :D

      I told you he would forget to make the booking didn't I! No he didn't forget, he just thought you DON'T need to make a reservation on an Easter Sunday (?!) So we ended up having to go to an old favorite place of ours, they were busy too but at least have room for us. We had a lovely meal, thanks. Hope your brunch was delicious as well:)

  8. 實在太讓人著迷了,真的很想試一口,可是在澳門,不知能否買到Stork margarine,如果沒有,可用甚麼代替呢?苦惱.感謝你分享食譜...太幸福了

      哈哈你也給這些杯子蛋糕給迷到了!Stork margarine 是特別為 baking 而製的,是較軟滑一點。相信在澳門也可以買到類似的產品。不然像我,用 Olive spread 也可以,有時我也用無鹽牛油的。
      用甚麼也沒大問題,have fun!!
