酸辣蕎麥涼麵 Spicy Cold Soba Noodles

昨天下午做了這道沙拉涼麵作午餐,非常健康和清爽好吃,15 分鐘不到便完成。

在炎熱天時、不想吃肉或忙碌的日子中,最為適合 。

I made this cold noodle salad for our lunch yesterday, it was such a healthy and refreshing light meal 

and it only took about 15 minutes to prepare. 

During hot and busy days when you don't want to eat meat, or don't have a lot of time to cook, this

dish will just be ideal for you.


  • 生抽 (醬油)  2 湯匙
  • 米醋 2 湯匙
  • 麻油 2 湯匙
  • 糖 1 湯匙
  • 蒜蓉辣椒醬 1 湯匙


材料(2 人份)

  • 蕎麥麵 (或任何麵條) 150g
  • 青瓜 1 條,用蔬菜刨子刨成薄片
  • 紅蘿蔔 2 小條,去皮切絲,紅洋蔥半個,去皮切絲
  • 烘香芝麻和碎烤花生各 1 湯匙


  1. 蕎麥麵根據包裝指示煮好,沖冷水,瀝乾。
  2. 大碗中加進青瓜、紅蘿蔔和紅洋蔥絲,下酸辣醬拌勻。
  3. 把麵加入碗中,與醬料和沙拉一起拌勻,盛進大碟/盤上,灑下芝麻花生便成。

Spicy Cold Soba Noodles 

Spicy sauce:

  • 2 tbsp soy sauce
  • 2tbsp rice vinegar
  • 2tbsp sesame oil
  • 1 tbsp sugar
  • 1 tbsp chilli garlic sauce
Put all above ingredients into a small clean glass jar, cover and shake well, leave to one side.

Ingredients: ( serves 2 )

  • 150g soba noodles
  • 1 cucumber, shaved into long thin strips with a vegetable peeler
  • 2 small carrots, julienned, 1/2 red onion, peeled and thinly sliced 
  • 1 tbsp toasted sesame seeds and 1 tbsp chopped roasted peanuts
  1. Cook the noodles according to the instructions on the packet, drain and refresh under cold water and drain again.
  2. In a large bowl, add the cucumber, carrots and red onions, stir in the spicy sauce and mix everything well.
  3. Add the noodles and toss gently to make sure everything is well coated with the spicy sauce. Serve on a large plate, topped with the toasted sesame seeds and chopped roasted peanuts.
