軟滑香濃小巧克力蛋糕 Soft & Moist Small Chocolate Cake


今天我這個蛋糕食譜是從我朋友那兒取的;而我朋友,則從她兒子處偷師回來傳授給我們的。

那天我們幾個鄰居茶聚,今次在 T 的家裏。她端出了一盤看來像心太軟的小巧克力蛋糕,你可以想像我們的尖叫聲。


她卻輕描淡寫地說:「這不是你們以為的 Chocolate Foundant,而是我兒子在做工的咖啡室那裏學得,每天都賣很多的小巧克力蛋糕。」


我們幾人本來有點失望的心情馬上轉為鼓勵激賞。

說實的,也真由衷替 T 感到滿足驕傲。她兒子自從 college 畢業後一直找不到適合的工作,覺得很洩氣。後來應徵這份見習餅師的職位,在一間家庭式但生意很好的咖啡西餅室那裏受訓。

他本身是很勤奮的年青人,愈忙便愈做得起勁。他現在的夢想是有天要親自經營一間屬於他自己的小茶室。


說回這個蛋糕。T 還有兩個年紀較少的孩子早上要送上學,回來後又有大堆的家務要做,自然沒有很多時間。她說蛋糕是前一晚臨睡前焗的,希望口感還不會太差。

結果是,入口鬆軟、滿是克巧力濃香的蛋糕,令我們愛不停口。自然,每人都向 T 取得食譜。第ニ天我趕不及照著做了,很心急讓老公嘗試。他含著滿滿的一口,給我豎起大姆指。




有他頷首讚同,我便放心。自然等不及要與大家分享了。


軟滑香濃小巧克力蛋糕 

材料:
( 做 6 個布甸杯子份量 ) 

70% 可可成份的黑巧克力 200 g
無鹽牛油 125g 切粒
中號雞蛋 2 隻,加中號蛋黃兩隻
幼黃砂糖 golden caster sugar 100g
麵粉 plain flour 50g 過篩
布甸杯子 6 個
另外已溶牛油作塗杯子用
烘焙紙少許
可可粉作鋪杯子內壁用





做法:
  1. 把 6 個布甸杯掃上牛油,底部放上一小方塊烘培紙,紙上也塗少許牛油。
  2. 把可可粉倒進杯內,旋轉著均勻鋪上–薄薄的一層。反轉杯子把多餘的可可粉輕輕敲掉。
  3. 預熱焗爐至 180 C / 350 F / Gas 4,把一個烤盤放進中層。
  4. 煲內注少許水燒開轉小火,把巧克力和牛油置上面輕輕熱溶,注意水不能碰到盛巧克力的盤底,間中攪拌。溶化後置一旁備用。
  5. 大碗內打入雞蛋和蛋黃,倒入砂糖,用手提打蛋器攪 2 分鐘或至膨漲 2 倍。加入麵粉拌勻。然後把巧克力溶液倒進,用膠刮小力全部拌勻。
  6. 把粉漿分別倒進布甸杯去。置焗爐的烤盤中烘 10 - 15 分鐘,至糕邊輕微收縮,用尖刀插入蛋糕抽出沒黏物便成。若黏著巧克力則沒問題。
  7. 取出待 1 分鐘過後,便反轉過來脫模, 洒上少許糖粉,置在已唧上焦糖漿,或雲尼那拖肥汁 toffee sauce 的碟上。配以雪糕便成。



我們村內有一位年青的媽媽,把喜愛為家人烘焙的嗜好變成專業。在她的家中成立了烘焙工作室,接受各式禮餅 order。如獲她同意,下次我帶你們去她家參觀看看。

    我家的最愛就巧克力了,這道點心一定要學起來。黃玫瑰花襯托下,好有夏天的感覺,好清爽。
    可是這蛋糕,卻是確確實實的惡魔蛋糕來著,旁邊還加了冰淇淋和"拖肥"醬汁,又邪惡又誘人,看來吃完可是要到學校操場跑上二圈才行,呵呵~

      巧克力蛋糕也是我們家的至愛,何時何地也受歡迎。卻真有給人天使與魔鬼的感覺。但不要緊嘛,平時小心飲食,好像你說的多做運動便可以放心了。甜品是生活中的陽光,怎可缺少 ;p
      花之中,我鍾情玫瑰,相信你也同意,她們的美是有目共睹,卻仍給人清麗脫俗的感覺,特別是淡色的玫瑰。

  2. Really mouthwatering! Love to try making them when I have time to shop for some metal pudding basins. I have some ceramic ramekins but I don't think they conduct heat as efficiently as the metal tins you used in this recipe. Thanks! Lorna

      Thank you! This recipe is so fault proof, can be presented elegantly at dinner or served as cakes for morning coffee or afternoon tea , can go with double cream, creme fraiche, Greek yogurt or ice-cream etc; really good to have as a safe dessert to make or for emergency :)

    Sorry I didn't see you upload this post ~ I only saw it on facebook hehe but i'm so glad you've posted it! These are definitely my top of chocolate cake ~ Soft and moist :D I hate chocolate cakes that are dry and hard :( unfortunately those are most cakes you find at bakeries here in HK :(

    I can't wait to try this recipe :D

      Oh please don't worry about it, we're so very busy all the time, sometimes I go to yours so late too :) I know, I'm very fussy with chocolate cakes too. I don't like them too sweet, too sticky or too creamy!! This one I have to say, is amount my top 5 :D

      至於你提出的問題。我想我不會有資格給你提出可靠的資料。
      因為我從沒試過在外國購買物業或以外國人身份在英國置產。
      也不認識有這方面經驗的朋友。
      但個人觀點,覺得古老的說法很對:「隔山買牛,唔知牛肥瘦。」
      如果不能親自看過和三口六面談過檢驗清楚才簽名,我認為太冒險!

    2. I think I can give you a little advise on this topic.
      I am living in UK since 1997. I bought a small 3 bedroom house in London in 1996 and asked the property agent to have it rented out, they charged me 13% on the rental received plus 15% VAT on the commission they earned. As a management agent they charged me everything with min £20 handling charges eg to change a toilet seat which only cost £15 + £20 handling charges + VAT. However they managed to find a tenant and arranged tenancy agreement on my behalf.
      I sold the house in London after I settled down in Milton Keynes in 1997. With that money; I bought another house in my area and asked the rental agent to find me a tenant and I do the mangement service myself. The agent charged me a one off payment of 1/2 month rental as their com. for finding the tenant for me, they completed the credit checking and setting up direct debits from the tenant and credit my a/c with the rental each month. So far I enjoy their service.
      I do suggest to come round to the UK to buy the house instead of asking the agent to help in buying a house for you, afterall the money involved is not a small amount. Hope this info helps.
