踏入三月後，我家的草開始長高了，但太濕潤，老公說暫還不能修剪。帶 Josh 去散步，野外的樹木花卉都已有春苗萌芽的跡象。滿天的雀鳥高歌迎春，一切都在告訴我們，寒冬已遠走了。
( 2 人份 )
牛排 2 塊約 400g，里脊 rib eye 或西冷 Sirloin 都可以
日式照燒醬汁 Teriyaki 3 湯匙
1 3/4 品脫 pint 清湯 ( 做法另述 )
蔥 1 - 2 條切粒
小紅辣椒 1 隻去籽切幼絲
青檸 1 隻
- 燒沸一大煲水，先把芽菜放入川燙 20 秒，取出馬上過冷河瀝乾備用。
- 把水再燒開，把乾麵條放入，根據包裝指示煮 2 - 3 分鐘或至剛軟，取出過冷河瀝乾備用 。
- 煎排鍋 ( 平底或有凹坑都可 )用中火燒至很熱約 1 - 2 分鐘，牛排用鮮磨海鹽、黑椒和橄欖油兩邊塗勻，放進鍋中乾煎，牛排上的橄欖油和本身脂肪已足夠油份。每邊煎 2 - 3 分鐘隨意。取出塗上照燒醬汁，5 分鐘後才切條。
1. 清水1200 ml，加入白酒4 湯匙， 蔥 2 條，薑數片，蒜頭 2 粒拍扁，白胡椒粉 1 茶匙，五香粉 1 茶匙，煲滾後小火煮 10 分鐘，過篩。
2. 把已過瀘的清湯再煲滾，轉小火，加入蠔油 2 湯匙、鹽 2 茶匙、糖 1 茶匙 ，生抽 2 茶匙 和麻油 2 茶匙；拌勻，試味便成清湯。

Yes, Josh is indeed our naughty border collie, he’s nearly 4 now, we had him since he was 11 weeks old, you can find him in this post or some of the others,

I was a terrible mum, wouldn’t let my children have dogs until my daughter’s final year in high school, now I’m being punished with looking after her dog! May be I shouldn’t have changed my mind :(

Thank you very much, glad you like it. The vegetable dish behind is made up of celery, bamboo shoots & sweet red pepper lightly blanched, then mixed together with garlic chili sauce, vinegar, sugar & sesame oil; decorated with coriander. I often do this with julienne vegetables as a side dish :)
