蒜蓉辣椒粉烤馬鮫魚 Roasted Mackerel with Garlic and Paprika


我們全家人都愛吃魚和海產。但近年來由於世界各地很多人工飼養魚場生產帶有化學品毒素和環境污染的魚和海鮮。我自己的家人和朋友都曾因為吃過這樣的海鮮如鱸魚、貽貝、蝦和鯰魚等之後感到不適和嘔吐不止。

We've always loved eating fish and seafood. But in recent years the cultivation and farming of fish and seafood in some parts of the world have produced chemically poisoned and environmentally polluted fish and seafood. Unfortunately with personal experiences from my own family and friends, sometimes such contaminated fish or seafood can be found in bass, mussels, prawns, river cobblers etc., caused or triggered off allergy like reactions, making us violently sick and feeling ill.  



現在我多數從相熟的本地魚販處買魚。和盡量避免買一些來歷不明或從不可靠魚場供應的魚產。

I've avoided buying fish and seafood from unreliable fish farm sources, and prefer buying them from local fish mongers. 


我們愛吃的魚有鱈魚、黑線鱈、所有扁魚家族如高眼鰈、大比目魚、鰨魚、鰈魚等等。還有馬鮫魚、鯛魚。烹製這些鱼都非常容易,也可以吃得放心。

We love eating fish like cod, haddock, all the flat fish family eg. plaice, halibut, brill, soles etc and mackerel, sea bream and so on. Cooking and eating these fish are simple, safe and enjoyable. 



人工漁場飼養的鮭魚,暫時沒令我認識的人有過上述不良的反應。所以我們也會繼續進食。

Farmed salmon so far, has not been known to cause reactions and attacks as those conditions mentioned above, so we still eat them regularly.


但我可以說的是,馬鮫魚一直是我們餐桌上最受歡迎的魚類之一。牠們不但含有所有的歐米加 3 脂肪酸,而且烹飪的方法很多;好吃、便宜和有大量供應。

But I have to say, Mackerel is definitely one of the firm favourites on our dinner table; not only they are full of  potential benefits of omega-3 fatty acids but also delicious, affordable and plentiful.

蒜蓉辣椒粉烤馬鮫魚
( 2 人份)
材料:
  • 無骨帶皮馬鮫魚柳 4 塊 ( 買魚時可請魚販起骨)
  • 蒜頭 2 粒剁蓉 
  • 辣椒粉 paprika 2 茶匙
  • 橄欖油 1 湯匙
  • 海鹽 2 茶匙
作法:
  1. 預熱烤箱至 220C / 425F / Gas 7
  2. 把蒜蓉,辣椒粉、海鹽和橄欖油置碗中拌勻成醬料。把魚放在碟上然後將醬料均勻塗沒在 4 塊 魚柳的上下两邊。
  3. 烤盤上鋪錫紙和烤架,魚柳排開;置烤箱內烤 12 - 15 分鐘至熟  ( 每個烤箱性能不同,請隨意加減時間 ) ,期間反轉 一 次。
  4. 烤好的魚、可伴飯、意麵或沙拉上桌。




Roasted Mackerel with Garlic and Paprika
( serves 2)
Ingredients:

  • 4 mackerel fillets, skin on
  • 2 garlic cloves, crushed
  • 2 tsp paprika
  • 1 tbsp olive oil
  • 2 tsp sea salt
Steps:
  1. Preheat the oven to 220C / 425F / Gas 7
  2. Put the garlic, paprika, sea salt and olive oil in a small bowl to mix into a smooth paste.
  3. Line a baking tray with foil and put the baking rack on top. Lay the mackerel fillets skin side down on the rack. Roast for 12 - 15 minutes until the skin is crisp and the fish is cooked through ( all ovens perform differently, please feel free to adjust the timing accordingly). Turning once during cooking.
  4. Roasted mackerel can be served with rice, pastas or salad.

馬鮫魚的季節下個月要開始了。很快我們便會上船出海,享受海風的同時希望還可以釣到幾餐的魚。

With Mackerel fishing season starting next month, soon we'll be on the boat out to the sea, catching the sea breeze and hopefully a few fish to last us a few meals.

  5. 吃海鮮吃到感到不適和嘔吐不止
    聽起來是很嚴重的事啊
    慶幸愛吃魚及海鮮的小咪和家人都未曾遇過
    鱸魚、貽貝、蝦,都是小咪常吃的

    鯰魚則是不敢吃,沒吃過
    因為曾在泰國報紙看過一則報導
    醫療科技廳公布檢測結果顯示
    食用烤鯰魚可能致癌
    烤鯰魚中含有大量的苯甲酸芘
    而苯甲酸芘是致癌的主要化學成份...

    這馬鮫魚在台灣稱為土魠魚,台南小吃最常見
    聽說烤馬鮫魚是中國古時宮廷料理,有「仙界美食」之美名呢!~

      也看過報導 ... 非常怕人 ...

      原來是宮廷美食之一。
      這魚在世界各地都有同家族卻不同外型名稱的,

  6. Hi Jane :) I know you celebrate Mother's day on a different day than us in Australia but nonetheless it was Mother's day here on Sunday so I hoped you had a good weekend ~

    It's such a shame that it's getting harder and harder to get fresh fish and that some fish can actually make us sick, I'm glad salmon is still okay because that's my favourite type of fish :D

      Thank you very much!! I hope you've got your Mother's day present from Ricky even though you're not a mother yet ;p I consider myself very lucky as I have reasons to celebrate Mother's day twice in a year!!

      You must have lots of seafood to choose from for cooking being in Australia!!
      We love seafood especially fish, but recent years have restricted to the ones we know that wouldn't cause any reactions and sickness for my husband and my daughter, and I can't be as relaxed and enjoy eating seafood as I once was which is a pity!!
