約克郡布丁 Yorkshire Puddings


這是我開始了部落格一年以來第四次在我家舉行的讀書會午餐茶聚。之前正盤算著今次要弄些甚麼好東西來招呼我三位書友之際,有讀者留言,想我示範做約克郡布丁。

靈感馬上便來了,我何不做一個烤牛肉午餐!傳統上就是用 Yorkshire puddings 伴著上的,正好一舉兩得。

烤肉午餐  Roast dinner 在英國又叫做 Sunday roast, 顧名思義當然是在星期天吃的。但我徵得幾位女士同意,她們都吃膩了聖誕新年過後的減肥菜,願意把命運交在我手上。 




Yorkshire puddings 雖然叫做布丁,卻不是甜品。這種蓬鬆薄脆充滿蛋香味的小東西,沾滿燒肉的汁才放進口裏,有說不出的滋味。

約克郡布丁當初的發源地自是 Yorkshire。但現在已演變成為膾炙人口,受全國大眾歡迎的食物之一。

傳統上是用燒牛肉的肥脂混進粉漿去,和塗沒在烤盤孔上以提高香滑的口感。但今天的我們飲食以健康為主。所以我只用少許植物油代替。


今次我們談論的書是 Lionel Shriver 的《 We need to talk about Kevin 》。這本書我幾年前在女兒的推薦下已讀得愛不釋手。它不單止在 2005 年嬴得了Orange prize,  2011 年還被拍成電影,由我喜歡的女導演 Lynne Ramsay 執導。

約克郡布丁:
( 健康版 ~ 可做 12 - 16 隻 )

材料:

麵粉 1/2 品脫 pint
牛奶 1/2 品脫 pint
雞蛋 6 隻
鹽 1 茶匙
花生油或菜油少許
4 孔的淺穴烤盤 3 個,或 6 孔的深杯烤盤 2 個


做法:

  1. 量杯中量出 1/2 品脫 pint 的麵粉,篩進一大碗內。
  2. 再量出 1/2 pint 的牛奶,也倒進碗中。
  3. 6 隻雞蛋打進,下鹽和油各 1 茶匙,用手提攪蛋器打至全都均勻幼滑。置冰箱內放 15 分鐘。取出拌勻然後過瀘進大量杯去。
  4. 預熱焗爐至 230 C / gas 8 / 450 F。烤盤放進焗爐熱 5 分鐘,取出,在每個穴上放少許油在中央,再放回焗爐烤熱才取出。
  5. 把量杯內的粉漿倒進烤盤穴中至半滿,油會沿著粉漿游開。
  6. 置焗爐內烘 5 - 10 分鐘後,把溫度調至 180C / gas 4 / 350 F,再烘 5 - 10 分鐘視個別焗爐的表現而定。期間不要走開,看布丁們都要升高漲起成金黃色但不要燒焦。不能打開焗爐,到滿意了才取出反轉約烤 5 分鐘,至底部也乾和脆了便成。
  7. 如有粉漿餘下可繼續至烘完為止。吃不完的 Yorkshire puddings 隔天可在焗爐內烤熱一點便成了。

  1. 喔喔喔...這真是好有英國風的一餐啊。還好我沒有在英國,不然可能要聞香而去、厚著臉皮敲門乞食,也還好我不是讀書會的一員,不然心不在焉,只是流了滿書的口水,就讓大家笑話了。每張照片都讓我愛不釋手,期待接下來的牛肉大餐。

    Yum yum i really like how your yorkshire puddings aren't really that 'burnt' hahaha sometimes the yorkshire puddings i see they are so burnt hehe :)

    對了,這是很傳統的英國餐。英國人世世代代,每星期天吃也不會厭的。我們入鄉隨俗,多年來也愛上了這種簡單但餵得飽一家人的好味 Sunday roast dinners。
    要是 Meiko 在英國會真好,我們可以相約不時去遊山玩水拍照,也可以一起讀書談天,吃你的麵包、嚐我的西餅,那有多好!

    Yes, but we’re more like a lunch or afternoon tea club, because each time we get together, we spent so much time eating and talking about food :p

    Basically, it’s just a reason for us to see each other, but everybody is so busy, and one of our club member friend recently separated from her husband ( another victim ... so sad ... ), we don’t know how long we can carry on with the readings, but will definitely carry on supporting each other over lunch.

    英國傳統美食我最愛Yorkshire pudding, 剛出爐的香嫩,就算不沾肉汁我也可以連吃幾個:)

    Thank you! Yes, they’re quite similar, the only difference is as you know, dutch baby pancake is a sweet breakfast dish whereas Yorkshire pudding is a savoury side dish for roast dinner. But I love them both and I can eat them any time of the day!!

    如果你有時間的話,請一定要讀這本書,雖然是很長很厚,但你絕對不會失望!書寫得一點也不像電影,只要你有耐性「捱」過開頭幾章,你就不能把它放下... 或者想放下好讓你舒一口氣!電影我個人認為也值得去看,但的確是寒慄和驚心,但為了Lynne Ramsay 和 Tilda Swinton,這代價是可以考慮的。
    Yorkshire puddings我也是通常烤起便撿來吃的,也不管它有燒汁沒有 :)
