草莓紅莓海綿蛋糕 Strawberry & Raspberry Sponge Cake


好友 S 於年多前帶著兒子們隨丈夫一起去澳洲居住。他先生忙於發展業務,她勤於理家,安頓孩子的生活和學業。

生活充實而忙碌,四個兒子都愛上了澳洲的天氣和生活方式,各種年輕人和小孩子們喜愛的水上和戶外活動;全家各成員都認識和結交了很多好朋友。

然而,他們都想家,懷念遠遠的故鄉;在英國的家人、朋友、食物。

今年二月,S 已獨自乘 21 小時的飛機回來,小住一星期,以解思鄉之苦。我們相約吃午餐,我給了她很多擁抱。

數月之後,她再回來。今次孩子學校放三星期的冬假,丈夫也和他們同行。


我們約好了,她抵步第ニ天,便帶年幼的三個兒子來探我們。

正巧我們剛從倫敦回來,女兒也跟著回家小住。雖然時間不充足,但有女兒協助,我們很快便弄了頓三個男孩都愛的簡單午餐。


蜜汁烤小雞腿。


各式新鮮肉腸。


甜包粟、牛油螺絲粉、沙律。


還有備受歡迎的鮮忌廉海綿蛋糕。時間很倉卒,沒有把蛋糕裝飾得很美。只隨便把新鮮的莓子放在忌廉上面,入口卻鮮甜美味。 


我們今次決定依照 Amy 的指示,用與雞蛋連殼同重量的麵粉、牛油和糖去做成的海綿蛋糕,無須用泡打粉。效果是我們做過的蛋糕中最香滑鬆軟的。要再次多謝 Amy!

草莓紅莓海綿蛋糕 

海綿蛋糕材料:
  • 雞蛋 3 隻 240 g ( 先將蛋連殼放在量度器上錄取正確重量。舉例,如果 3 隻蛋是 240 g 的話,就用 等量 240 g 的牛油、自起粉和幼砂糖。)
  • 自起粉 self raising flour 240 g 過篩
  • 幼砂糖 caster sugar 240 g
  • 無鹽牛油 240 g
  • 雲尼拿香精 2 茶匙
兩個 20cm 可以脫底的小糕盤 
鮮忌廉 250g
糖霜 1 湯匙 
草莓或紅莓果醬隨意 

綿
  1. 烤蛋糕前 10 分鐘預熱焗爐至 180C / 350F / Gas 4,把兩個糕盤底部鋪烘焙紙,盤邊和紙上塗油備用。
  2. 牛油和幼砂糖放進大碗內,用手持電攪拌器 打至淺黄和鬆起。 
  3. 蛋打進另一小碗內,用义子打勻。然後逐點小小地打進已混好的牛油和砂糖去。 
  4. 自發粉加進牛油砂糖混合料去,繼續用手機打勻。
  5. 把粉漿分開倒進兩個糕盤內,撥平頂部,放進烤爐裏,焗 20 - 25 分鐘,至外邊金黃而中間沒黏性便成。取出置鐵網架上待涼。                                                                                                       
夾心和糕面忌廉做法:
  • 大碗內倒入 250g 鮮忌廉 fresh cream,加進 1 湯匙糖霜 icing sugar,用手持電攪拌器打拌至軟滑企身便可以,不要過度。 
草莓紅莓海綿蛋糕
  • 待蛋糕涼去後,把其中一個翻轉,塗上果醫。另一個蛋糕翻轉,塗上 一半的忌廉,蓋上蛋糕。把餘下的一半忌廉塗在蛋糕表面,抹平。隨意美麗地排列草莓紅莓便成。


今次見面之後,不知跟 S 再會何時。她的兒子們都十分的活潑可愛,聰明有禮,又非常喜歡和 Josh 玩。我們真捨不得讓他們離去。

    在濕熱的梅雨季節尾聲,暑假就要來了。再過一個星期,我就不必帶便當,而與朋友家庭互訪的機會就多了。所以除了你的莓果蛋糕,我還睜大眼睛把桌上的各項能快速上菜的佳餚全部記下來,家庭餐會時一定能幫上大忙^^

      時間果是會無聲地溜走的。想不到暑假轉瞬間竟已逼近眉睫。很快 Meiko 便可以暫時結束便當生涯,輕鬆一下!到時你的拿手美味麵包點心,才真大派用場呢!
      我很懷念孩子小時,他們的小同學和媽媽一起來玩的日子。那時大人談天,小孩玩耍,愉快無比。Meiko 要盡量享受這些珍貴的樂趣啊 :)

    妳的朋友有4個小朋友, 一定很忙碌照顧他們! 她很棒喔! 21小時由澳洲回英國, 想她真的很掛念那裡各樣東西和親友. 相聚一刻, 已是樂事, 可能好快又再見面呢! 食物很豐富, 小朋友喜歡呢, 吃光光吧!

      我的朋友是位認真的媽媽。她對孩子們的教導嚴謹卻平衡,日常生活中品德的培養與學校教育同樣重視。她的四個兒子都充滿信心,活潑好動,大方有禮,樂天友愛。我常為她感到愉快滿足。

  6. 搬来了吉隆坡一年多我还是时时刻刻想念墨尔本的天气(不过最近大家都在喊冷,也许窝在热带的天气也不是件坏事),还好再过几个星期又可以回墨尔本了!
    话说回来,你们在短短时间可以做出那么多菜肴真是太厉害了!那蜜汁小鸡腿好诱人啊!

  7. Every dishes and sponge cake all sound so yummy ! check the ingredients for sponge cake, it sound like making a pound cake because the equal portion of ingredients.

      Yes, the recipe for a sponge cake is very similar to a pound cake :)

  8. hi Jane, thank you much for the sponge cake recipe. I made it on Saturday but the cake was quite dry. possibly because I did not completely follow your recipe. as I don't have 2 small size cake pan, I used one slightly bigger size cake pan (22 cm), and I also only used half the sugar. do you think these two factors contribute to the dryness? the taste of the cake, however was excellent, very buttery and sweet
    enough for us, I have 2 young daughters aged 5.5 and 3. I love your blog. thank you very much.

    Thank you very much for your message, it's so kind of you to let me know that you like reading my blog, it gives me a lovely and uplifting feeling!
    I think the possible problem with your sponge cake could be that you used one tin instead of two. Because the thickness of the cake altered, the baking time would have to be adjusted too, you need to know your oven very well to make sure what is the right time for one thick cake instead of two thinner ones. As the equal
    amount of flour, butter, sugar and egg recipe is a tried and tested one used by many chefs, it doesn't normally fail :)
