菜遠雞柳,涼拌藕片青瓜,和番茄紅蘿蔔馬鈴薯湯《家常小菜》


英國今年很熱鬧。這個夏天,將會有兩個意義非常重大的慶典和節目。

6 月 5 日是英女皇在位六十週年鑽石銀禧紀念。到時整個週末至星期二當天都會有豐富的活動安排慶祝。

7 月 27 日至 8 月 12 日則是在倫敦舉行的 2012 年奧林匹克世運會。我們都很期待。

小時候,我應該只有幾歲大,那時住近彌敦道。記憶中,有一兩次擠在封了道的馬路邊,與兩旁圍滿著人的群眾一起等待觀看;不知是祝賀英女皇壽辰,抑或是歡慶在位週年紀念的馬車、士兵和樂隊等巡遊而過。

那情景十分深刻的留藏在我腦海中。後來搬離了那區,長大期間就一直沒再看過巡行。隨著年齡增長,回憶中的意象逐漸淡去。偶爾想起,我會懷疑究竟那是親身的體會,還是夢中的經歷?如果是夢境,為何那麼多年後,仍保存印象?


日常生活中有些平凡的事情,或吃過的食物,不但永遠不會忘記,還歷久彌新。


像母親煲過的湯。


炒過的菜等等。


母親雖然不在。

憑回憶,我們仍可以重覆母親的烹飪方法。透過食物,把她給我們和她身邊人的愛,延續下去。



番茄紅蘿蔔馬鈴薯排骨湯
( 4 人份 )


材料:
  • 豬蹍肉 340g 左右。
  • 紅蘿蔔 500g
  • 番茄 250g
  • 馬鈴薯 250g
  • 薑 2 片
做法:
  1. 湯鍋內注 8 碗水,去皮薑片 2 小塊,蓋著用大火燒開。 
  2. 另一小鍋內也注水燒開 ,豬蹍肉放沸水中,滾開後用小火煮 2 分鐘去血水油脂。然後取出用自來水沖淨,放進湯鍋內,用大火煮滾 。
  3. 馬玲薯去皮洗淨切方塊。 番茄、紅蘿蔔 ( 如果是有機的,可以不去皮 ) 洗淨切大塊。同置湯鍋內 ,大火滾開後用小火煲 1 小時便成。  
  4. 喝時先用湯匙把煲內湯面的油花盛走,下少許鹽試味便可以了。

涼拌藕片青瓜
( 4 人份 )


材料:
  • 蓮藕半條
  • 青瓜 1 條
  • 調味料:蒜蓉辣椒醬 1 湯匙,糖 1 湯匙,紅醋 2 湯匙,麻油 1  湯匙,鹽 1/4 茶匙
做法:
  1. 蓮藕洗淨去皮切薄片,置滾水中煮 2 - 3 分鐘至剛稔,然後傾去沸水過冷河,瀝乾。
  2. 青瓜洗淨刨間條皮切粗片。
  3. 大碗內放藕片青瓜,加進調味料拌勻,用保鮮紙蓋著置冰箱內。吃時再拌勻才取出盛碟上,碗內的醋汁可隨喜愛的多少淋上。

菜遠雞柳
( 4 人份 )


材料:
  • 菜芯 1 斤
  • 雞腿 3 隻 或 豬頸肉適量。( 份量可隨意加減,也可以用雞胸肉 )
  • 醃料:鹽 1 茶匙,糖 1 茶匙,生抽 2 茶匙,老抽 ( 醬油 )  2 茶匙, 麻油 2  茶匙,胡椒粉半茶匙,酒 1 湯匙,生粉 2 茶匙,油 1 湯匙。
  • 蠔油 2 湯匙
做法:
  1. 滾水中下少許鹽油,把菜芯放入川燙 30 秒至稍軟,取出在篩內攤開瀝乾。
  2. 雞腿去皮去骨切柳條 (或把豬頸肉切薄片), 用醃料拌勻。
  3. 煲沸少許開水備用。鑊燒紅,如果用不沾底的易潔鑊便不用下油。用其他鑊的話則下油 1 湯匙旋開燒熱。放進雞柳或肉片排開,煎至一邊金黃,用鍋鏟全部反轉。
  4. 雞柳或肉片的另一面也差不多全煎香後,轉中火。下小半碗滾水,加入蠔油,快手拌勻畧煮, 試吃厚的一片,雞肉剛熟了便熄火。
  5. 把菜芯倒下鍋中分散,與雞柳和汁兜勻上碟。

這樣簡單的家常飯菜,自小吃大,永遠不會忘懷。

且健康有益,又可助清熱消暑。在炎夏將臨的這個季節,很是適合。

  2. 從新聞中也得知這些事.那Jane今年會去看夢中的巡行嗎?那種感覺一定很棒!只不過人一定很多,觀光客會塞的滿滿的.嗯...還是看轉播好了!^_^!

    台灣也吃菜芯,前幾年做的多,做到腰酸背痛的:).都拿來做涼拌.脆脆的很下飯.不過Jane的菜芯看起來比較綠,可能品種不同吧!

      兩個大慶典都是在倫敦,首都平時已非常忙碌,到時更會人山人海!我們都不是愛趁熱鬧的人,只會舒舒服服的坐在家裏喝冷飲、吃零食觀看啦!小時的印象如夢似的留下,那感覺很好,不想破壞了它 :)
      用菜芯作涼拌,沒試過呢!可能是不同品種。改天 fish做到的話,要讓我大開眼界啊!

  3. 對呀! '吃過的食物,不但永遠不會忘記,還歷久彌新' - 飲食不只是填飽肚子及享受食物的美味,更多的是食物伴隨著的人和事(感情,記憶)! 有時候我想起很久以前吃過的美味東西及和我一起吃過的人,我就會立即去買材料弄! :)
    我也常用甘筍,薯仔去煲湯呢!它們實在很方便,便宜又有營養! 謝謝分享食譜!:)

      物質上,我們小時家裏很貧乏。為甚麼?因為爸爸是位多才多藝的畫家、作家和音樂家。我們五兄弟姊妹都沒有玩具。但富有的是不斷的創意,都是爸爸教的。自己做檯椅、傢俱、玩樂器、看書、繪畫、聽爸爸說故事 ... 等。所以我小時是個充滿幻想的孩子。
      Meiko真是位細心的好媽媽和週到的太太,每次看食譜,首先研究是否可以用來做便當 :)

      Indeed, happiness can be found amongst the most ordinary things in life, and homely food is one of them. 涼拌 is a very good way of preparing another dish for the family without a lot of work. It's a housewives' dream recipe, exciting to the taste bud but easy to do.

    I love your homemade dishes ~ they're all so pretty and delicious! I've already booked marked your soup recipe! It's perfect because it doesn't look that difficult and it's the best because you used pork and not beef :) Mr Bao can't have beef because of his eczema woo hoo :D and i agree it's definitely a busy year for the UK ~ I've always liked the Queen hehe even though I know many people don't do you get an extra day off in the UK this year because its her Jubilee birthday?

      Thank you for loving my homemade dishes. I must admit I don't normally make soup or meals that are too complicated, I simply don't have a lot of time, and I enjoy cooking and tasting food that retain the original flavour.
      I admire the Queen, her family has gone through a lot of problems and heartache over the years, and she's still remain strong and dedicated, a very unique woman!
      Yes, we do. The Queen's Jubilee is on the 5th June, but we'll have both the 4th June and 5th June as bank holidays ( public holiday), so people will have a long weekend to celebrate :)

    日後懷念起的都是家常菜呢! 我母親讓我父親寵壞了, 婚後從沒下過廚, 有管家打理... 不過我童年記憶滿滿是外婆的好菜, 也很幸幅啦!!!

    涼拌藕片百吃不厭, 我的比較偷懶, 就只白醋加白糖和海鹽 :P

  13. 以前我只知蓮藕茶,有一回,友人來訪,做了兩道蓮藕料理,都放了點醋,果真提味爽口,從此每逢夏日,蓮藕便常出現我家。向來不喜擠人群,大型巡行總是避開,可也奇怪,一旦逼自己參加了,卻有股莫名的振奮,幾年後看相片,還會有"我也在那歷史片刻中"的感覺。

      蓮藕真是很特別的一種食材,煲、煮、燜、炒、拌都行,十分 versatile!也是我們家的常客。
      我不可以想像脫俗出塵的 V 擠人群的模樣!必定仍然帶著很 cool 的神態 ;)
