泰式烤雞 Thai Style Roasted Chicken


兒子最近很忙。雖然未畢業,已有很多實習的工作機會。他的志願是要成為一位導演。
過去兩年來,他已拍了很多套短片和替好幾隊樂隊編導了音樂影帶。

前一陣子他去替一齣電影做監製部跑腿的工作。說是很難得的機會,可以親自目睹資深導演的工作方法。在戶外拍攝了一個月,風餐露宿。看照片中的他,穿著又厚又大的外褸,不修邊幅的樣子,一改平時性格潮流品味派的衣著方式。跟他在電話中交談,說每早由天未亮開始要工作至晚上,除了睡覺之外,沒有任何空閒時間。如果當晚班的話,則由凌晨工作至翌日下午,睡醒了便要立即前去報到。

言下卻感到充實滿足,除了道歉沒時間跟我們見面或聯絡之外,語氣中沒半點抱怨。我們兩老對視,兒子真的長大成熟了。想起他 17 - 19 歲離開學校,堅持要組織樂隊那兩年,我們怎麼擔心他的理想若不成功,學業前途卻放棄了的日子。不讚成也要支持的心情。那些時光是怎樣過去的,我們也不知道。所以現在看見那不羈的浪子腳踏實地的唸書、工作、學習和生活,怎不叫我們舒一口氣!


沒見了一個月的他今早來電,說做雜務的工作完成了。正要開始撰寫編導一套音樂短片,又會繼續馬不停蹄,但等回可以返家來坐坐聊聊。


兒子回來,我這老媽子自然喜出望外。雖然沒太多時間預備,只要即時動手,也可以泡製出他心愛的泰式烤雞,臨時配道涼麵和新鮮沙律;家中還有芒果,做那款芒果椰汁糯米飯作甜品好了。



看兒子神采飛揚,卻黑黑瘦瘦的。明天趁他未出外之前,要送些湯水過去,給他清理一下腸胃。


雞腿烤熟後我把骨除了切件上碟。幼河粉灼熟後過冷河,瀝乾。拌灼熟涼去的牙菜、麻油、糖、醋和芝麻。


三道小吃他都喜歡。在烤雞、涼麵和沙津上擠了清檸,淋滿酸甜辣汁;他吃了滿滿的三碟!
我還預先替他把一些裝好了讓他帶回去。



泰式烤雞
( 4 人份)

材料:

    雞腿 4 隻
  • 蒜頭 8 粒
  • 九層塔 Basil 1 大撮
  • 香茅 2 枝
  • 莞茜 1 大撮
  • 蠔油 2 湯匙
  • 魚露 2 湯匙
  • 海鹽 2 茶匙
  • 川椒粉 ( 或胡椒粉 ) 2 茶匙
  • 糖 1 茶匙
  • 酒 2 湯匙
  • 紅椒粉 Paprika 1 湯匙
  • 蜂蜜或椰奶少許在雞腿臨出爐前 2 分鐘塗上



做法:
  1. 預熱烤爐至 200C / 400F / Gas 6。先把頭 4 種材料放進攪拌機打成碎末 ( 香茅先拍扁和切小段 )。然後撥進大碗內,加進其餘材料拌勻 ( 除了蜂蜜或椰奶 )。
  2. 雞腿放進撈勻醃半小時以上 ( 也可過夜 )。
  3. 烤盤上鋪鋁箔紙,把雞腿反轉排開,皮部向下,可將雞腿上醃料中的香茅絲和太多的醃料碎粒撿起撥走。置烤爐內燒 30 - 35 分鐘左右,中段時間取出把皮部反轉向上才繼續燒烤。臨夠鐘前可用竹筷子剌進 雞腿背後厚肉部份測試,抽出時沒流出稀紅色液汁便成,剛熟最好。
  4. 關掉爐火,雞腿底面掃上蜂蜜或椰奶 (隨個人口味),放回熱烤爐內靜置 2 分鐘。

我把其中 1 隻取去等回讓兒子帶走。其餘的待涼後把雞腿反轉過來 (帶皮的反面),中間下刀,把骨除去,再切成塊狀放回腿型上碟。



匆忙間弄的芒果椰汁糯米飯。


過兩天會多弄一次,做得更漂亮點,到時再來與大家分享好嗎?


這些泰色風味小食,相信天熱時會很受歡迎。也相當適合家中開大食會時,作款客美食呢。

    忙得好一會沒時間blogging,一來便看見華麗精采的芒果三重奏和香噴噴的泰式烤雞,還沒到吃飯時間就餓的肚子咕嚕咕嚕叫,唉!
    原來令郎的志願是當導演,也是遺傳吧!有位會說故事的媽媽 :)

      It's like you said, only after you became a mother, you then understand what your own parents used to do for you, and how much we've taken them for granted!! We were given love unconditionally, we are just giving them to our children more or less the same way.

      今年是我兩個孩子在大學的最後一年。平時學院假期多,兩兄妹還可以經常回家。畢業後他們將會全力找工作,到時回家機會一定不會太常。所以每次他們回來,我都會煮兩人最愛吃的東西 :)

    thanks for your great marinate recipe, i made this tonight for dinner, both my hubby and my daughter like it so much. even good for chicken breast as my hubby is on diet, i made a chicken breast in the same marinate. i have boil up the marinate with little and finish with a tsp of honey serve as extra dipping sauce.

  11. 讀完這篇文章,真的很感動.最近不知怎樣,看到偉大的母親系列,眼淚都會不聽使喚.真傷腦筋...哈哈!:)

    想到以前離家唸書,每次回到家,媽媽總一桌好料.我也是以此來自我期許,雖然台灣到處都有美味,但還是希望小J會懷念媽媽做的菜.說到這個,得好好跟Jane學學,加強廚藝.今天先來個泰式烤雞好了:)

    It must be difficult for you during those two years... I guess it's never easy being a mom. I just became a mom last year, and already getting so concern about my boy's future. Always wondering how I can do better to lead him well and be a real good man. :-) But I guess the first thing I need to do is to be a good cook, like you. Therefore I always visit your blog. Reading your blog always bring me the peace of moment.

    I am going to try this receipe when my father-in-law come visit. I'll let you know how that turn out. Once again, keep up the great and simple be the graceful you...

      First of all, congratulations for becoming a mom! Hope you have all the joy and happiness in bring up your little boy! Thank you for being so nice and lovely, wish you were here when we were going through the 'growing pain' :)
      It was very hard at the time indeed, but we believed he had to have the opportunity to pursue his dream, rather then falling out with him and let him struggle by himself, we chose to stand by him; at least that way, we knew he wouldn't be strayed off too far from the right track and could always follow the way home.
      With the kind support from his tutor, we kept him in education one way or another, so when he had finally decided to return to study, he had the qualification to apply for university, and he has enjoyed it so much ever since!

      Yes, please let me know how you get on with the recipe. Many thanks again for your support and encouragement :)

  13. WOW :) Your son wants to be a director ~ That's wonderful! Its so nice to see other young people (lol i'm pretty young) do things that they really enjoy and not do it because it's the 'right' thing to do and they're not even passionate about it. I mean I see so many people at work...they don't really like what their doing that's why they don't like coming into work...

    It's even better when you have a supportive mother like you :) You are always so supportive of your children no matter what they do and the food you make is just so comforting! Would you like to adopt another daughter? :P

      Haha, I wouldn't mind adopting a daughter if they are as hard working and lovely as you are :)
      Growing up, children became detached from their parents, they have the rights to follow their hearts with or without our permissions. To give them supports is like giving ourselves a ticket on the train ride, it could be a long and tiring journey, sometimes going through very dark tunnels, and may even crashed and gone off the rails ... but if we are on board with them, at least we are there being with them to see it through ...

      And yes, cooking their favorite food is another good reason to entice them home too :)

  15. I've made a simpler version of Thai's lemongrass chicken last night. It's so addictive especially when the chicken is well marinated! Your photos are making me so hungry!
