鹹花生醬碎巧克力曲奇 Salted Peanut Butter Choc Chip Cookies


一年一度的暑假來了。又是妹妹的兒子從香港來探我們的時候。

The summer holiday is here again.  Time for my sister's son, coming from Hong Kong, to visit us as usual.

今次他的一位同班同學 D 與他同行。兩人都快 16 歲了,很有獨立能力和主見。一起出去逛街購物時已不用我們陪同。

This time his school friend D came along with him. They are both nearly 16, very capable of looking after themselves. We don't have to go with them anymore when they go out shopping together. 


兩人都是攝影發燒友。不逛街時我們帶他們去拍照,讓他們拍個夠本。

They are both mad about taking photographs.  When they're not shopping, we take them everywhere to let them take lots of photos. 





他們都很喜歡吃我煮的東西。特別是醉雞海南雞和燒羊腿,後面两款還要重覆再吃。


They seem to like my cooking. Especially 'drunk chicken', Hainan chicken and roasted leg of lamb. They liked them so much that I had to repeat the last two dishes a second time.  




還有這些曲奇餅。

And these cookies too.




女兒八月尾便會回倫敦上班,學業生涯告一段落。這两個月她想回家來歇歇。在家期間,她又在附近 C 城的「露天劇院」找到一份暑假全職。想不到說是回來休息,結果比以前更忙。

Our daughter will go back to London to start working at the end of August. She wanted to come home to take a rest after spending so many years studying.  Whilst she's here, she found a summer job working at the " Grosvenor Park Open Air Theatre ".  Although this is supposed to be a relaxing time for her, somehow she has become busier then she was before.


前天是她一星期中唯一的休假。母女兩人喝茶聊天,想起那款要做了很久,Orangette 的曲奇。

It was daughter's only day off in a week the other day.  While we were chatting and drinking tea, we remembered the cookies by Orangette that we wanted to make for a long time.



鹹花生醬碎巧克力曲奇
( 約做 36 塊 )

材料:
  • 麵粉 plain flour 240g
  • 泡打粉 baking powder 5g
  • 海鹽 12g
  • 室溫無鹽牛油 275g
  • 幼黄糖 golden caster sugar 370g
  • 蛋 ( 大號 ) 2 隻
  • 軟滑花生醬 400g
  • 雲尼拿香精 2 茶匙
  • 切小碎塊的牛奶巧克力
做法:
  1. 將麵粉、泡打粉和海鹽在大碗內攪勻。
  2. 另一大碗中, 用手提打蛋器,把牛油和糖一起攪拌至鬆軟,要把旁邊黏著的撥回碗去 ( 用長木匙攪拌也可以 )。蛋逐隻的份量隨打隨加進。繼而加入花生醬和雲尼拿香精,用中慢速度拌勻。跟著將 1. 料分三次加進,用低度拌勻;然後倒入碎巧克力,約畧用低度輕拌一下至全部均勻便成。
  3. 預熱烤爐至 180C / 350F / Gas 4,烤盤上鋪烘焙紙。用 2 隻甜品匙或用取雪糕的圓匙,把粉漿盛起撥成小圓球狀,置烤盤上 ( 每盤只能放 6 個,要保持距離,因烘起後會澎漲 )。烤 15 - 20 分鐘至金黄便成。
  4. 把整個烤盤放在架上,放涼後才把曲奇從盤上取出置架上待涼。涼了的曲奇餅拿起時才不會鬆散。


 Salted Peanut Butter Choc Chip Cookies
(makes 36 cookies )

Ingredients:
  • 240g plain flour
  • 5g baking powder
  • 12g sea salt
  • 275g unsalted butter
  • 370g golden caster sugar
  • 2 large eggs
  • 400g smooth peanut butter
  • 2 tsp. vanilla extract
  • 170g chopped milk chocolate 
Steps:

  1. In a bowl, mix the plain flour, baking powder and salt together.
  2. Put the butter and sugar in another large bowl, use a hand held mixer, beat the butter with the sugars until light and fluffy, scraping down the sides of the bowl as needed. ( You can also do this by hand, with a wooden spoon. ) Add the eggs one at a time, beating between each addition.  Add the peanut butter and vanilla, and beat on medium-low speed to blend.  Add the 1. ingredients in three batches, mixing on low speed until incorporated and scraping down the sides of the bowl as needed.  Add the chocolate, and beat briefly on low speed, just until evenly incorporated.
  3. Preheat the oven to 180C / 350 F / Gas 4, and line a baking sheet with parchment paper.  Using two dessert spoons or an ice cream scoop, scoop the batter onto the prepared baking sheet, taking care to leave plenty of space between cookies ( limit it to six cookies per pan; if you add more, when they expand, they will stick together ).  Bake for 15 - 20 minutes until golden.
  4. Put the baking sheet on a rack, and cool the cookies completely on the baking sheet to prevent they crumble at touch before transferring the cookies onto the rack, they will firm up as they cool.  




這入口甘香酥脆,'甜中帶鹹'的曲奇餅,吃時給你有無法抗拒的感覺。相信我,這大概是世界上最好吃的曲奇之一 ( 如 Orangette 說 ) 。
These crunchy and extremely tasty cookies, the 'sweet and salty' flavour combination are totally irresistible.     Believe me,  they may be some of the best cookies that you will ever eat ( like Orangette said ).

    看起來都挺早熟的呢
    可以想像他們有多獨立
    台灣許多近16歲的孩子
    還是很像小孩一樣哩!!~

      現在的孩子真的很懂事成熟。
      記得自己 16 歲時,
      還只會去離島旅行。
      他們不但穿洋過海,在外國的地方還會拿著地圖四處去。
      半點也不畏懼。
      真是長江後浪推前浪!

      I really have been very busy lately!! Like all summer holiday time and Christmas time! Did I just mention Xmas? Haha no kidding! As soon as summer holiday is over, people in this country will start be thinking and planning about X'mas!!

      Thank you for your encouragement, I have to say I wish there are more then 24 hours in a day, I just never seem to have enough time to do everything I wanted to do though ... like replying and leaving comments ... please forgive me if I haven't been efficient with either!!

      My sister wasn't here, it was just her son and his friend. She is coming to the UK with her husband for a business short trip next March, can't wait to see her then!!

      你說得對!年輕的生命和日子都或許是無憂逍遙的!
      但年青人也有年青人的煩惱 ...
      學業、愛情、事業 ...
      每個階段的人生都有苦與樂。
      依個人意見,兒女在青春期開始至正式成年期間 ( 13 - 19 ) 是父母與子女或夫婦間最受考驗的時期 ...

    自從兩年前焗過一次,已有一段長時間沒有焗曲奇了。
    妳的兒甥真有口福啊!看見他們燦爛的笑容,兩個年輕人一定非常享受這個夏日!:D
    這個夏天,倫敦一定十分熱鬧,人山人海。
    昨天看新聞說倫敦酒店一房難求,有的士更改為流動床位給人租住!:o

      沒錯,花生醬這食物真的很討人愛,經常教人欲罷不能!
      幸好很多減肥食譜都奇蹟地沒有把它們列為違禁品,
      不然我會很 miss 偶然的煉奶花生醬厚多士!

      兩個小子很獨立,有他們在這兒,雖然忙碌但見到他們對週圍事物的熱愛,自己也被他們年輕的生命力感染!他們也說過要两個傻瓜闖倫敦,但在還不夠 16 歲年紀的今年,我沒有答應 ~

      那兩個傢伙還不夠 16 歲,我沒同意他們去倫敦,只讓他們在這兒的北威爾斯和鄰近的曼徹斯特和利物浦遊玩購物而已。他們都說英國的東西都比香港平,買到差不多清袋 ~~

      哈哈每年暑假我家都會很熱閙的。做了家庭主婦之後,才知道一家之煮的重要性!

      每個家庭如果有年輕人,長大了回家,很多時都想回味家裹的飯菜,好慰遊子的心思和肚皮。

      做了母親後,我才明白以前媽媽每每為我們回家吃一頓飯,整天張羅的緊張!

      這加了少許鹽的花生醬,更能'吊'出巧克力的甜味,入口甘甜鹹香,回味無窮 ~

      我女兒這暑假除了那臨時工外,還在家替未上班工作的的公司做設計事宜,真是忙得僅夠時間睡覺。

    Thanks for your kind blessing regarding my job searching!

    因歐債問題和美國經濟不好, 香港出口業不好, 我做的工種正正是重災區又年紀大, 不容易找到工作.
    真的不同上次辭工, 客人們(local & foreigners)經常接觸我, 知道我做事有責任感..... 所以客人幫我找工,當知道我辭了工. 但今次情況不同, 客人常常轉換(不是特定的客人), 沒有深厚交情.

    現今情況, 正常渠道很難找工(自己做開的field/other fields),真的很想有人介紹, 比較容易點.

    Anyway, I will try my best to find a new job again. Thanks a lot!
